Brewing Tea Base and Chia Prep
- Roasted Oolong Tea: Steep 5g in 150ml hot water for 10 minutes. Filter out leaves, refrigerate to chill.
- Chia seeds: 1 teaspoon, soaked in 20ml warm water for 5 minutes until fully bloomed into jelly-like sacs, adding fun texture.
- Canned Lychee (or peeled fresh lychees): 3 whole fruits.
- Lychee syrup (brine from the can): 30ml

The art of fruit tea lies entirely in its temperature. Warm tea makes fruits taste overpowering and fermented. Toss the oolong base, lychee syrup, and half a spoon of sugar into a shaker and shake well. Pour the bloomed chia seeds to the bottom of a tall elegant glass.
